White Chocolate Raisin Oatmeal Cookies

Salted butter

½ cupWhite chocolate chips
or chopped white chocolate bar

Preheat the oven to 350F (177C) convection and line two cookie sheets with parchment paper.

In a medium bowl, microwave the butter for 20-30 seconds until melted, letting it cool slightly if it becomes too hot.

Add the light brown sugar to the melted butter and whisk for about a minute, then add the egg and vanilla and whisk until completely smooth.

Add the flour, oatmeal, cinnamon, baking powder, and salt and fold the dough just until no flour streaks remain.

Fold in the raisins and white chocolate until evenly dispersed.

Split the dough into 8 cookies (approx. 2.5 oz each), placing 4-6 per sheet, and bake for 12-14 minutes until edges are brown and centers are puffed.

Remove from oven, tap the pan on the counter, and use a biscuit cutter to scoot the cookies into rounds if desired.

Sprinkle with sea salt flakes and let rest for 5-10 minutes before moving.
